Crispy Beef Chimichangas

Ingredients
  

  • 1 1/2 pounds lean ground beef
  • 1 medium yellow onion, diced
  • 2-3 cloves garlic, minced
  • 1 teaspoon chili powder or to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1 15 oz can diced tomatoes with green chilies
  • 1 15 oz can refried beans
  • 8 10-inch flour tortillas
  • 1 1/2 cups cheddar cheese, shredded
  • Vegetable oil for frying
  • Optional toppings: sour cream, guacamole, salsa, shredded lettuce, chopped tomatoes, chopped cilantro, etc.

Method
 

  1. In a large skillet, cook the ground beef and diced onion over medium-high heat until the beef is browned and the onion softens.
  2. Add minced garlic, chili powder, cumin, and oregano to the skillet. Stir well and cook for about 30 seconds until fragrant.
  3. Pour in diced tomatoes, stirring occasionally until most of the liquid evaporates. Fold in refried beans and remove from heat.
  4. Briefly warm the tortillas in the microwave. Spoon about 1/3 cup of the filling onto the bottom third of each tortilla, adding shredded cheese on top.
  5. Fold the bottom edge of the tortilla over the filling, tuck in the sides, and roll it up tightly.
  6. In a deep skillet or Dutch oven, heat 2 inches of vegetable oil to 350°F. Fry each chimichanga for 2-3 minutes per side until golden and crispy.
