- Pour warm water into a large bowl, then add sugar and yeast; let it sit for 5 minutes until frothy.
- Stir in salt and gradually incorporate flour until combined.
- Knead the dough by hand for about 10 minutes or use a stand mixer with a dough hook.
- Once the dough has risen and doubled in size, turn it onto a lightly floured surface.
- Divide the dough into 2 or 3 equal portions and shape each into a rectangle, folding the edges toward the center and rolling gently under your palms.
- Place shaped baguettes on a baking sheet lined with parchment paper and cover loosely with a damp towel; let them rise for about an hour.
- Preheat the oven to 480°F (250°C) and place a small oven-safe dish filled with water on the bottom rack.
- Score the tops of the baguettes with a sharp knife or razor blade.
- Brush the loaves lightly with milk or olive oil and bake for 25 minutes, or until golden brown.
