- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Peel the potatoes if desired, then chop them into 1-inch cubes or slice them into half-inch rounds.
- In a large mixing bowl, toss the potato pieces with olive oil, salt, pepper, and Herbes de Provence until well coated.
- Spread the potatoes in a single layer on the prepared baking sheet and roast for about 25 minutes.
- While the potatoes roast, slice the smoked sausage into half-inch rounds.
- Remove the baking sheet from the oven, scatter the sausage over the potatoes, and top with the shredded cheese.
- Return the baking sheet to the oven and bake for an additional 10 to 15 minutes until the cheese is melted and bubbly.
