- Preheat your oven to 200°C (about 400°F).
- Wash the potatoes well and pierce them several times with a fork. Wrap each potato in aluminum foil.
- Bake the potatoes for about 60 minutes on the middle rack of the oven.
- In a mixing bowl, combine the chopped garlic, parsley, chives, crumbled goat cheese, olive oil, salt, and pepper to make the filling.
- Once the potatoes are done, let them cool for a few minutes. Cut each potato in half lengthwise and scoop out a bit of the flesh, leaving a sturdy shell.
- Mix the scooped-out flesh with the filling and spoon the mixture back into the potato shells.
- Place the stuffed potatoes back in the oven without the foil for an additional 15 minutes for a crispy finish.
