Ingredients
  

  • 4 medium potatoes
  • 2 cloves garlic crushed
  • 1 bunch fresh parsley
  • 1 bunch chives
  • 50 g goat cheese
  • 1 tbsp olive oil
  • to taste salt
  • to taste pepper

  • Mixing bowl
  • Sharp knife

Method
 

  1. Preheat your oven to 200°C (about 400°F).
  2. Wash the potatoes well and pierce them several times with a fork. Wrap each potato in aluminum foil.
  3. Bake the potatoes for about 60 minutes on the middle rack of the oven.
  4. In a mixing bowl, combine the chopped garlic, parsley, chives, crumbled goat cheese, olive oil, salt, and pepper to make the filling.
  5. Once the potatoes are done, let them cool for a few minutes. Cut each potato in half lengthwise and scoop out a bit of the flesh, leaving a sturdy shell.
  6. Mix the scooped-out flesh with the filling and spoon the mixture back into the potato shells.
  7. Place the stuffed potatoes back in the oven without the foil for an additional 15 minutes for a crispy finish.
