Ingredients
  

  • 4 small russet potatoes peeled and diced
  • 1 small white or yellow onion chopped
  • 1 cup shredded carrots
  • 1/2 cup diced celery
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 3 cups chicken broth
  • 1 pound lean ground beef
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk 2% recommended
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 package Velveeta processed cheese cubed OR shredded cheddar cheese

Method
 

  1. Peel and dice the potatoes, chop the onion, shred the carrots, and dice the celery. Place in the crock pot with dried basil and parsley.
  2. Pour chicken broth over the vegetables. Cover and set to low for 6-8 hours, or high for 4-5 hours, until the potatoes are tender.
  3. About 45 minutes before serving, cook and crumble the ground beef in a skillet over medium-high heat. Drain excess grease and add to the crock pot.
  4. In the same skillet, melt the butter, whisk in the flour, and cook until golden brown. Gradually whisk in the milk, salt, and pepper. Pour into the crock pot and stir to combine.
  5. Add cubed Velveeta or shredded cheddar cheese to the crock pot and stir. Cover and let cook for another 20 minutes until cheese is melted.
  6. Ladle the soup into bowls and serve hot.
