Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1/2 cup brown sugar packed, for streusel
  • 1/2 cup all-purpose flour for streusel
  • 1 tsp ground cinnamon for streusel
  • 1/4 cup unsalted butter cold and cubed for streusel
  • 1/2 cup chopped walnuts or pecans optional, for streusel

Method
 

  1. Preheat the oven to 350°F (175°C) and prepare a 9x9-inch baking pan by greasing it and dusting it with flour.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar using a hand mixer until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla.
  5. Alternate adding a third of the dry ingredients and half of the sour cream to the butter mixture, mixing until just combined.
  6. In a small bowl, combine brown sugar, flour, and cinnamon for the streusel. Add cold, cubed butter and mix until crumbly, adding nuts if desired.
  7. Pour the batter into the prepared pan, smoothing it evenly. Sprinkle the streusel over the top.
  8. Bake for 30-40 minutes, until golden brown and a toothpick inserted into the center comes out clean.

Notes

Be sure to use softened butter for the cake batter and cold butter for the streusel for the right textures. If you want to change things up, try adding fruits like blueberries or apples to the batter, or use yogurt instead of sour cream.
