Ingredients
  

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 packet onion soup mix
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • ½ cup shredded mozzarella optional
  • 2 large yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • ½ cup beef broth
  • q.s. Salt & pepper to taste
  • 6-8 slices Swiss cheese
  • q.s. Fresh parsley for garnish

Equipment

  • Crockpot or slow cooker
  • Large mixing bowl
  • Measuring cups and spoons
  • Spatula or wooden spoon

Method
 

  1. In a skillet, heat the butter and olive oil over medium heat.
  2. Add the sliced onions, season with salt and pepper, and sauté until caramelized (about 15-20 minutes).
  3. In a large mixing bowl, combine ground beef, egg, breadcrumbs, onion soup mix, garlic powder, Worcestershire sauce, and optional mozzarella.
  4. Mix well until evenly distributed and form into a loaf shape.
  5. Place the caramelized onions in the bottom of the slow cooker.
  6. Pour in the beef broth over the onions.
  7. Carefully place the meatloaf on top of the onions.
  8. Cook on LOW for 6 hours or HIGH for 3-4 hours.
  9. Optional: Broil for a few minutes after adding cheese for a crispy crust.
  10. Let meatloaf rest before slicing.
