- In a skillet, heat the butter and olive oil over medium heat.
- Add the sliced onions, season with salt and pepper, and sauté until caramelized (about 15-20 minutes).
- In a large mixing bowl, combine ground beef, egg, breadcrumbs, onion soup mix, garlic powder, Worcestershire sauce, and optional mozzarella.
- Mix well until evenly distributed and form into a loaf shape.
- Place the caramelized onions in the bottom of the slow cooker.
- Pour in the beef broth over the onions.
- Carefully place the meatloaf on top of the onions.
- Cook on LOW for 6 hours or HIGH for 3-4 hours.
- Optional: Broil for a few minutes after adding cheese for a crispy crust.
- Let meatloaf rest before slicing.
