- Preheat your oven to 180°C (350°F) and prepare a rectangular pan (about 30x20 cm) by greasing and dusting it with flour or cocoa powder.
- In a large mixing bowl, cream together softened butter and granulated sugar until pale and fluffy.
- Add eggs one at a time, mixing fully after each addition until the mixture is glossy.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Alternate adding the dry ingredients and the chilled coffee and milk to the wet mixture until just combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake in the center of the preheated oven for 25-30 minutes or until a toothpick comes out with just a few moist crumbs.
- Let the cake cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
- Once cooled, slice the cake horizontally into two layers and spread Lotus Biscoff cream evenly on the bottom layer, then place the top layer on.
- Dust the top with powdered sugar before serving.
