Ingredients
  

  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1/2 cup chopped red onion
  • 1 cup shredded cheddar cheese
  • 1 unit avocado, diced
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup tortilla chips, crushed
  • 1/2 cup sliced black olives
  • 1/4 cup chopped cilantro
  • q.s. ranch dressing optional

Method
 

  1. In a skillet over medium heat, cook the ground beef with minced garlic until browned; drain excess fat.
  2. Stir in taco seasoning and a splash of water; simmer for about 5 minutes.
  3. In a large salad bowl, combine chopped lettuce, diced tomatoes, red onion, cheddar cheese, avocado, black beans, corn, and black olives.
  4. Top the salad base with the cooked ground beef and sprinkle with crushed tortilla chips.
  5. Drizzle with ranch dressing if desired and serve immediately.
