Ingredients
  

  • 8 slices sourdough bread or your favorite sandwich bread
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach leaves
  • 1/2 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons softened butter for grilling
  • 1 small garlic clove minced
  • a pinch red pepper flakes

  • Mixing bowl
  • Spatula

  • Butter knife

Method
 

  1. In a medium bowl, mix together ricotta, grated Parmesan, chopped sun-dried tomatoes, garlic, and red pepper flakes until combined.
  2. Lay out the slices of bread and spread the ricotta mixture on four of the slices, then add spinach and top with mozzarella.
  3. Close the sandwiches with the remaining slices of bread, buttering the outside of each sandwich.
  4. Heat a skillet over medium-low heat and grill the sandwiches, 3-4 minutes per side, until golden brown and cheese is melted.
  5. Allow sandwiches to rest for 2 minutes before slicing and serving.
