Method

  3. Stir in the sliced cremini mushrooms and fresh thyme leaves, cooking until tender and golden brown (6-8 minutes).
  4. Sprinkle the all-purpose flour over the mixture and stir until incorporated. Cook for 1-2 minutes.
  5. Gradually pour in the vegetable broth while stirring continuously; bring to a boil then simmer for 15 minutes.
  6. Stir in the heavy cream and let the soup heat through without boiling; adjust salt and pepper to taste.
  7. Ladle the soup into bowls, garnish with chopped parsley, and serve immediately.
