Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp butter for sautéing onion
  • 1 medium yellow onion finely chopped
  • 2 cloves garlic minced
  • 1.5 cups long-grain white rice uncooked
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions for garnish

Method
 

  1. In a large mixing bowl, toss the chicken pieces with olive oil and all spices.
  2. Let the chicken sit with the seasoning for 10-15 minutes.
  3. Heat a large, oven-safe skillet over medium-high heat and sear the chicken until golden brown.
  4. Remove the chicken to a plate.
  5. In the same skillet, melt butter and sauté the onion until soft; then add minced garlic.
  6. Stir in uncooked rice and toast lightly before adding chicken broth.
  7. Simmer, cover, and cook the rice for 15 minutes until tender.
  8. Stir in heavy cream and cream cheese until smooth, then add shredded cheeses.
  9. Fold the seared chicken into the cheesy rice mixture.
  10. Preheat the oven to 375°F (190°C) and bake for 15 to 20 minutes until the cheese is bubbly and golden.
  11. Garnish with chopped green onions and serve.
