Ingredients
  

  • 4 slices white sandwich bread pain de mie
  • 100 g soft goat cheese
  • 100 g bacon lardons or chopped bacon
  • 2 large eggs
  • 200 ml heavy cream or crème fraîche
  • 50 g grated cheese like Gruyère or Emmental
  • Salt to taste
  • black pepper to taste
  • Butter for spreading

Method
 

  1. Preheat the oven to 200°C (400°F) and prepare a baking dish or lined baking sheet.
  2. Cook the bacon lardons in a skillet over medium heat until crispy, then drain on paper towels.
  3. In a medium bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth and pale yellow.
  4. Butter one side of each slice of bread and place two slices, buttered-side down, in the baking dish.
  5. Spoon a generous amount of the creamy egg mixture over the bread, crumble goat cheese on top, and scatter the bacon lardons.
  6. Place the remaining two slices of bread on top, buttered-side up, and press down gently.
  7. Sprinkle the grated cheese on top and press down slightly to adhere.
  8. Bake in the preheated oven for 15 to 20 minutes until golden brown and bubbling. Optionally, broil for the last minute for extra crispness.
  9. Serve immediately, cutting the sandwiches in half to reveal the creamy interior.
