- Preheat the oven to 200°C (400°F) and prepare a baking dish or lined baking sheet.
- Cook the bacon lardons in a skillet over medium heat until crispy, then drain on paper towels.
- In a medium bowl, whisk together eggs, heavy cream, salt, and black pepper until smooth and pale yellow.
- Butter one side of each slice of bread and place two slices, buttered-side down, in the baking dish.
- Spoon a generous amount of the creamy egg mixture over the bread, crumble goat cheese on top, and scatter the bacon lardons.
- Place the remaining two slices of bread on top, buttered-side up, and press down gently.
- Sprinkle the grated cheese on top and press down slightly to adhere.
- Bake in the preheated oven for 15 to 20 minutes until golden brown and bubbling. Optionally, broil for the last minute for extra crispness.
- Serve immediately, cutting the sandwiches in half to reveal the creamy interior.
