Method
- Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy using an electric mixer for about 3 minutes.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients in thirds, alternating with the buttermilk, starting and ending with the dry.
- Gently stir in the hot water until well mixed; the batter will be thin.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50 to 60 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let the loaf cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
- Meanwhile, make the ganache by heating the heavy cream until it simmers, then pouring it over the chocolate chips and letting it sit for 2 minutes.
- Whisk until smooth and glossy, then pour it over the cooled loaf.
- Garnish with fresh raspberries and powdered sugar as desired.
