Ingredients
  

  • 113.5 g unsalted butter, softened
  • 200 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 187.5 g all-purpose flour
  • 35 g unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 120 ml buttermilk
  • 120 ml hot water
  • 170 g semi-sweet chocolate chips for ganache
  • 120 ml heavy cream for ganache

  • 9x5-inch loaf pan
  • Two mixing bowls one large, one medium
  • Electric hand mixer or stand mixer
  • Whisk
  • Spatula
  • Measuring cups and spoons
  • Wire cooling rack
  • Small saucepan

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy using an electric mixer for about 3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  4. In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients in thirds, alternating with the buttermilk, starting and ending with the dry.
  6. Gently stir in the hot water until well mixed; the batter will be thin.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  9. Let the loaf cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
  10. Meanwhile, make the ganache by heating the heavy cream until it simmers, then pouring it over the chocolate chips and letting it sit for 2 minutes.
  11. Whisk until smooth and glossy, then pour it over the cooled loaf.
  12. Garnish with fresh raspberries and powdered sugar as desired.
