  • 2 delmonico steaks (about 1.5 inches thick)
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper optional for heat
  • 2 tablespoons butter
  • 3 garlic cloves smashed
  • 2 sprigs fresh thyme

Method
 

  1. Pat your steaks dry with paper towels to ensure a good sear.
  2. Mix spices together to create the delmonico steak rub and rub it on both sides of the steak.
  3. Let the steaks sit at room temperature for 30 minutes.
  4. Heat your cast iron skillet over high heat until it's smoking hot, then add the olive oil.
  5. Place the steaks in the skillet and let them sear undisturbed for 3-4 minutes per side.
  6. After searing, add butter, garlic, and thyme to the pan, spooning melted butter over the steaks.
  7. For thicker cuts, transfer the skillet to a preheated oven at 400°F and bake for 5-7 minutes for medium-rare, ensuring an internal temperature of 130°F.
  8. Allow the steak to rest tented with foil for 5-10 minutes before slicing.
