Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 1 cup fresh or frozen cherries, pitted and chopped

Method
 

  1. Preheat the oven to 350°F (175°C) and prepare a 9x13-inch pan by greasing and dusting it with flour.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy.
  3. Beat in the eggs one at a time, then add the vanilla and almond extracts.
  4. In a separate bowl, whisk together flour, baking powder, and salt, then gradually add it to the butter mixture, alternating with the milk.
  5. Toss the chopped cherries with a tablespoon of flour and fold them into the batter gently.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. While the cake cools, make the frosting by beating together cream cheese and butter until smooth, then add powdered sugar and cherry preserves.
  8. Once the cake is cool, frost with the cherry cream cheese frosting and chill before slicing if desired.
