Method
- Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish.
- If using ground beef, brown it in a skillet over medium heat. Drain excess fat. If using shredded chicken, warm it slightly.
- In a large mixing bowl, combine cream of chicken soup, undrained Rotel tomatoes, sour cream, milk, and taco seasoning. Mix until smooth.
- Add the cooked chicken or beef to the creamy sauce and fold gently until well coated.
- Spread half of the crushed Doritos in the bottom of the baking dish. Layer with half of the meat and sauce mixture, and one cup of shredded cheese. Repeat the layers.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Optionally, add extra cheese on top and bake for an additional 3-5 minutes until melted. Let rest for 5 minutes before serving.
