Ingredients
  

  • 4 medium-sized Belgian endives
  • 1 cup Roquefort cheese crumbled
  • 3 tablespoons butter
  • 2 tablespoons honey
  • 1 sheet puff pastry store-bought or homemade
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil

Method
 

  1. Heat the butter and olive oil in a skillet over medium heat.
  2. Slice the endives lengthwise and place them cut-side down in the pan.
  3. Let them cook until golden brown, about 5–7 minutes.
  4. Drizzle honey over the endives and season with salt and pepper.
  5. Roll out your puff pastry on a lightly floured surface and cut it into a circle slightly larger than your baking dish.
  6. Arrange the caramelized endives in a circular pattern at the bottom of your baking dish.
  7. Sprinkle the crumbled Roquefort evenly over the top.
  8. Cover with the puff pastry, tucking the edges inside the dish.
  9. Press gently around the edges to seal everything snugly.
  10. Bake in a preheated oven at 375°F (190°C) for 25–30 minutes, or until the pastry is golden and puffed.
  11. Let it rest for 5 minutes before flipping it onto a serving plate.
