Ingredients
  

  • 6 endives
  • 2 onions
  • 100 ml crème fraîche
  • 4 halal-certified smoked beef sausages

Method
 

  1. Wash and trim the endives, removing tough outer leaves and slicing them lengthwise.
  2. Peel and thinly slice the onions.
  3. Slice the sausages into bite-sized pieces at an angle for better presentation.
  4. In a large pan over medium heat, add olive oil and the sliced onions, stirring occasionally to caramelize them for about 10–15 minutes.
  5. Push the caramelized onions to one side of the pan and add the endives, cooking until they soften and develop a slight char.
  6. Stir the endives and onions together to combine flavors.
  7. Add the sausage pieces and let them brown slightly.
  8. Pour in the crème fraîche, stirring gently to coat everything and let it simmer for 5–7 minutes as the flavors meld.
