- Wash and trim the endives, then cut them in half lengthwise.
- Peel and slice the onions thinly.
- Heat a splash of olive oil in a large nonstick pan over medium heat, then add the onions and let them soften.
- Once the onions are caramelized, push them to one side of the pan and place the endives cut-side down to sear.
- Flip the endives and mix them with the onions.
- Slice the halal beef sausages into bite-sized pieces and add them to the pan, stirring to combine.
- Cook for about 5 minutes until the sausages are heated through.
- Pour in the crème fraîche, stir gently, and let it simmer for a few minutes until the sauce thickens.
- Taste and season with salt, pepper, and a pinch of nutmeg.
