Ingredients
  

  • 6 units endives
  • 2 units onions
  • 100 ml crème fraîche
  • 4 units halal beef sausages, smoked

Method
 

  1. Wash and trim the endives, then cut them in half lengthwise.
  2. Peel and slice the onions thinly.
  3. Heat a splash of olive oil in a large nonstick pan over medium heat, then add the onions and let them soften.
  4. Once the onions are caramelized, push them to one side of the pan and place the endives cut-side down to sear.
  5. Flip the endives and mix them with the onions.
  6. Slice the halal beef sausages into bite-sized pieces and add them to the pan, stirring to combine.
  7. Cook for about 5 minutes until the sausages are heated through.
  8. Pour in the crème fraîche, stir gently, and let it simmer for a few minutes until the sauce thickens.
  9. Taste and season with salt, pepper, and a pinch of nutmeg.
