Ingredients
  

  • 1000 g beef (gîte, paleron, or macreuse)
  • 3 onions thinly sliced
  • 2 tbsp whole-grain mustard
  • 50 g butter
  • 15 ml vegetable oil
  • 30 g brown sugar
  • 500 ml dark Belgian beer
  • 2 slices gingerbread
  • 2 bay leaves
  • 3 sprigs thyme
  • 1 tbsp red wine vinegar
  • q.s. salt and pepper to taste
  • 250 g fries homemade or store-bought

Method
 

  1. Heat butter and oil in a large pot over medium heat.
  2. Add beef chunks and brown them on all sides, then remove and set aside.
  3. In the same pot, add sliced onions and cook until translucent and caramelized, adding brown sugar.
  4. Return beef to the pot alongside mustard, vinegar, beer, bay leaves, and thyme.
  5. Spread mustard on gingerbread and place on top of the stew; cover and simmer for 2.5 to 3 hours.
  6. Prepare fries while the stew simmers, ensuring they're crispy.
  7. Once the stew is ready, serve in bowls alongside fries and garnish with parsley if desired.
