Ingredients
  

  • 3 large onions thinly sliced
  • 3 tablespoons butter
  • 1/2 cup beef broth
  • 1/4 cup dry white wine optional, can substitute with more beef broth
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce
  • 4 slices Swiss cheese
  • 1 1/2 pounds ground beef 80/20 blend
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves chopped or 1/2 teaspoon dried thyme

Equipment

  • Large skillet
  • Grill or second large skillet/cast-iron pan
  • Large mixing bowl
  • Sharp knife and cutting board
  • Spatula and mixing spoon

Method
 

  1. Caramelize the onions in a skillet with melted butter over medium heat for 25-30 minutes, stirring every 5 minutes.
  2. Once onions are caramelized, add beef broth and wine, scraping up browned bits, then simmer for 5 minutes and season with salt, pepper, and Worcestershire sauce.
  3. In a bowl, gently mix ground beef, garlic, onion powder, garlic powder, thyme, salt, and pepper, then form into patties.
  4. Cook patties on a hot grill or skillet for 4-5 minutes per side, adding Swiss cheese during the last minute to melt.
  5. Toast the hamburger buns in the skillet or grill until golden.
  6. Assemble burgers with a patty on the bottom half of the bun, topped with caramelized onions, then place the top bun.

Notes

For a different taste, try using Gruyère cheese instead of Swiss. If you're out of white wine, simply replace it with an extra 1/4 cup of beef broth.
