Ingredients
  

  • 1 pound ground beef (80/20 blend)
  • 2 large yellow onions, thinly sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp balsamic vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 slices Gruyère or Swiss cheese
  • 4 buns brioche or hamburger buns
  • to taste fresh thyme (optional, for garnish)

Method
 

  1. In a large skillet, heat butter and olive oil over medium heat.
  2. Add the sliced onions and stir only every 5 minutes for 20-25 minutes until caramelized.
  3. Stir in sugar and balsamic vinegar; cook for an additional 2 minutes, then set aside.
  4. In a mixing bowl, combine ground beef with garlic powder, salt, and pepper; mix gently and shape into 4 patties.
  5. Heat grill or cast iron skillet over medium-high heat and cook patties for 4-5 minutes per side for medium doneness.
  6. In the last minute of cooking, place slices of cheese on patties and cover to melt.
  7. Lightly toast brioche buns, then assemble by placing a patty on the bottom bun, topping with caramelized onions, and garnishing with thyme if desired.
  8. Add the top bun and enjoy!
