Ingredients
  

  • 250 g beef sirloin or flank steak thinly sliced
  • 1 tbsp soy sauce for marinade
  • 1 tsp oyster sauce for marinade
  • 1/2 tsp black pepper
  • 1 tsp cornstarch
  • 2 tbsp vegetable oil
  • 6-8 whole garlic cloves peeled
  • 1 large green bell pepper sliced
  • 1 tsp soy sauce for cooking
  • 1 tsp oyster sauce for cooking
  • 1/2 tsp sugar
  • 1 tbsp water optional, for more sauce

Equipment

  • Wok or large skillet
  • Sharp knife
  • Mixing bowl
  • Wooden spoon or spatula

Method
 

  1. Marinate the beef with soy sauce, oyster sauce, black pepper, and cornstarch in a bowl for 10-15 minutes.
  2. Heat 1 tablespoon of oil in a wok or large pan over high heat and sear the marinated beef for 2-3 minutes until browned. Remove and set aside.
  3. In the same pan, add the remaining tablespoon of oil and sauté the whole garlic cloves for about a minute.
  4. Add the sliced green bell pepper and stir-fry for another 2 minutes until slightly softened.
  5. Return the seared beef to the pan, add the remaining soy sauce, oyster sauce, sugar, and optional water, and stir-fry for 1-2 minutes until well combined and heated through.

Notes

You can substitute beef with chicken or pork, and feel free to use other vegetables like broccoli or snap peas. The key to a great stir-fry is cooking at high heat and not overcrowding the pan.
