  • 4 Tbsp Butter softened
  • 1 Tbsp Olive Oil
  • 2 cloves Garlic minced
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Lemon Zest
  • 1 Lemon sliced
  • 2 Tbsp Parsley
  • ½ tsp Salt
  • ½ tsp Cajun Seasoning divided
  • q.s. Salad or any preferred vegetable side dish Optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Season the cod fillets with salt and Cajun seasoning on both sides.
  3. In a small bowl, mix softened butter, olive oil, lemon juice, minced garlic, lemon zest, fresh parsley, and additional Cajun seasoning.
  4. Place lemon slices and cod fillets in a baking dish, topping each fillet with about 1 tablespoon of the garlic butter mixture.
  5. Bake cod for 10-12 minutes or until the fish is opaque and flakes easily with a fork.
