Ingredients
  

  • 6 slices bacon
  • 1 large head cabbage core removed and sliced
  • 2 cloves garlic minced
  • 1 large onion diced
  • 1 tbsp salt
  • 1 tsp ground black pepper

Method
 

  1. Cook the bacon over medium heat in a skillet until crispy, then transfer to a paper-towel-lined plate, leaving the grease in the pan.
  2. Sauté the onion and garlic in the bacon grease until soft and translucent, about 5 minutes.
  3. Add the sliced cabbage to the skillet and cook for 10-12 minutes, stirring occasionally, until tender and caramelized.
  4. Sprinkle salt and black pepper, then add the crumbled bacon back to the skillet and cook for an additional 2-3 minutes.
  5. Remove from heat and serve warm, possibly with buttered cornbread.

Notes

You can substitute bacon with pancetta, ham, or sausage for a different flavor. A vegetarian version can use olive oil or butter instead of bacon.
