- Fill a large pot with water, salt it well, and bring to a boil. Cook the tortellini according to package directions until tender and then drain.
- Pat the steak pieces dry and season with Cajun seasoning, garlic powder, smoked paprika, black pepper, and salt.
- Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat, then sear the steak tips in a single layer for 2-3 minutes per side until caramelized.
- Lower the heat to medium and add the remaining 1 tbsp of butter to the skillet. Sauté minced garlic for 30 seconds.
- Pour in beef broth and heavy cream, scraping up browned bits to deglaze the pan. Bring to a gentle simmer.
- Add softened cream cheese and cubed Velveeta, stirring until melted. Gradually whisk in Parmesan and mozzarella until thick and creamy.
- Stir in Italian seasoning and adjust the sauce with salt and pepper. Let simmer for 1 minute.
- Add the cooked tortellini to the sauce and gently toss to coat. Reintroduce the seared steak tips and heat through for about a minute.
- Plate the creamy tortellini and top with the steak tips, spooning extra sauce over.
- Garnish with chopped parsley and additional Parmesan before serving hot.
