- Bring a large pot of well-salted water to a rolling boil and cook pasta shells according to package directions for al dente. Drain, reserving about half a cup of pasta water.
- Pat steak cubes dry with paper towels, season with salt and pepper, and sear in a hot skillet with 1 tbsp butter for 2-3 minutes on one side until browned. Flip and cook for another 1-2 minutes. Remove and set aside.
- In the same skillet, reduce heat, add 2 tbsp butter, and minced garlic. Cook for 30-60 seconds until fragrant, being careful not to burn.
- Pour in heavy cream, stir, and let warm for a minute. Reduce heat to low and gradually add grated Parmesan cheese, stirring until melted and smooth. Add Italian seasoning and adjust consistency with reserved pasta water as needed. Season with additional salt and pepper.
- Return cooked pasta shells and steak bites to the skillet, tossing to coat in the sauce. Heat through for another minute or two on low. Serve garnished with parsley and extra Parmesan if desired.
