  • 2 cups baby potatoes halved
  • 4 tbsp unsalted butter
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh rosemary chopped, optional
  • 1 tsp fresh thyme chopped, optional

Method
 

  1. Start by cutting your steak into bite-sized pieces.
  2. Halve the baby potatoes and mince the garlic.
  3. In a hot skillet, heat up some olive oil over medium-high heat.
  4. Add the steak bites and let them sear for about 2 minutes per side until golden brown.
  5. Remove the steak bites and set aside.
  6. In the same skillet, toss in the halved potatoes and cook for about 8-10 minutes until fork-tender and slightly crispy.
  7. Lower the heat and add the butter to the skillet, then toss in the minced garlic.
  8. Let the garlic infuse the butter for a minute, then return the steak bites to the pan.
  9. Sprinkle with salt, pepper, and herbs, then stir to coat everything in the garlic butter sauce.
