- Bring a large pot of salted water to a boil and cook the bowtie pasta until al dente (about 8-10 minutes). Drain.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken pieces and season. Cook for 6-8 minutes until golden-brown; remove and set aside.
- Lower the heat, add the remaining butter, then stir in minced garlic and Cajun seasoning. Cook for 30 seconds.
- Sprinkle in flour and stir for 1 minute to form a smooth base.
- Slowly pour in chicken broth while stirring. Once thickened, add heavy cream, milk, and cream cheese. Stir until melted and smooth.
- Gradually stir in mozzarella cheese until melted and stretchy. Add Parmesan cheese and combine.
- Toss in the cooked bowties and cooked chicken, mixing gently to coat. Use reserved pasta water if necessary.
- Let rest for 1-2 minutes before serving. Garnish with chopped parsley or Parmesan.
