Ingredients
  

  • 12 oz bowtie pasta (farfalle)
  • 1 lb boneless skinless chicken breasts, cut into thick bite-sized pieces
  • 2 tbsp olive oil
  • 5 tbsp unsalted butter, divided
  • q.s. Salt and freshly cracked black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 tsp dried oregano
  • 5 cloves garlic, finely minced
  • 1 tbsp Cajun seasoning
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 2 tbsp cream cheese
  • q.s. Optional garnish: chopped parsley or a light dusting of Parmesan

Equipment

  • Large pot for boiling pasta
  • Large skillet for cooking chicken and making the sauce
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Grater for Parmesan cheese

Method
 

  1. Bring a large pot of salted water to a boil and cook the bowtie pasta until al dente (about 8-10 minutes). Drain.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken pieces and season. Cook for 6-8 minutes until golden-brown; remove and set aside.
  3. Lower the heat, add the remaining butter, then stir in minced garlic and Cajun seasoning. Cook for 30 seconds.
  4. Sprinkle in flour and stir for 1 minute to form a smooth base.
  5. Slowly pour in chicken broth while stirring. Once thickened, add heavy cream, milk, and cream cheese. Stir until melted and smooth.
  6. Gradually stir in mozzarella cheese until melted and stretchy. Add Parmesan cheese and combine.
  7. Toss in the cooked bowties and cooked chicken, mixing gently to coat. Use reserved pasta water if necessary.
  8. Let rest for 1-2 minutes before serving. Garnish with chopped parsley or Parmesan.
