Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1 pound linguine pasta
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions

Method
 

  1. Cook the linguine according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat; add chicken and seasonings, sauté until golden brown, about 6-8 minutes; remove chicken from skillet.
  3. Reduce heat to medium and sauté minced garlic for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth; bring to a simmer, then add cheeses and stir until smooth.
  5. Add cooked linguine and sautéed chicken to the skillet; toss until evenly coated with the sauce.
  6. Garnish with chopped green onions and serve immediately.
