Ingredients
  

  • 4 large russet potatoes peeled and cubed
  • 4 cloves garlic roasted
  • 1 cup heavy cream warmed
  • 1/2 cup unsalted butter melted

  • 2 tablespoons fresh chives finely chopped

Method
 

  1. Start by peeling and cubing the potatoes.
  2. Boil the potatoes in salted water until fork-tender, about 15 minutes.
  3. While the potatoes are boiling, roast your garlic by drizzling it with olive oil, wrapping in foil, and baking at 400°F for about 20 minutes.
  4. Drain the potatoes and let them sit for a minute to dry out.
  5. In a large bowl, mash the potatoes until smooth.
  6. Add the warm cream and melted butter, mixing gently.
  7. Fold in the roasted garlic and season with salt and pepper.
  8. Finally, sprinkle in the chives.
