  • 900 g carrots washed, scrubbed, and cut diagonally into 3-inch pieces
  • 4 tbsp butter
  • 4 cloves garlic thinly sliced
  • 1 tsp Italian seasoning
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
  • 0.5 cup Parmesan cheese grated
  • 0.25 cup fresh parsley chopped

Method
 

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper or lightly greased.
  2. Wash and scrub the carrots, then slice them diagonally into long pieces, and place them in a large mixing bowl.
  3. In a small saucepan, melt the butter over low heat and add the sliced garlic, Italian seasoning, salt, and pepper. Stir until fragrant.
  4. Pour the butter mixture over the carrots and toss until well-coated.
  5. Sprinkle the grated Parmesan over the carrots and mix again, then spread them evenly on the baking sheet in a single layer.
  6. Roast in the oven for 20 minutes, gently stirring halfway through for even cooking. Ensure they are tender and slightly caramelized before removing.
