Ingredients
  

  • 2 pounds carrots washed, peeled, and cut diagonally into 7 cm pieces
  • 4 tablespoons butter melted
  • 4 cloves garlic thinly sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh parsley chopped

Method
 

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with grease or parchment paper.
  2. In a small microwave-safe bowl, melt the butter and stir in the garlic, Italian seasoning, salt, and pepper.
  3. Pour the butter mixture over the carrots and toss until fully coated; add parmesan and mix again.
  4. Spread the carrots in a single layer on the baking sheet and roast for 20-25 minutes, stirring halfway through.
  5. Remove from the oven, adjust seasoning if needed, sprinkle with parsley, and serve immediately.
