Ingredients
  

  • 2 pounds carrots, washed, peeled, and cut diagonally cut into 7 cm pieces
  • 4 tablespoons butter melted
  • 4 cloves garlic thinly sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh parsley chopped

Method
 

  1. Preheat your oven to 220°C (425°F) and prepare a rimmed baking sheet with parchment paper or a light greasing.
  2. Wash and peel the carrots, then slice them diagonally into roughly 7 cm pieces. Toss them into a large mixing bowl.
  3. In a small microwave-safe bowl, melt the butter and stir in the sliced garlic, Italian seasoning, salt, and pepper.
  4. Pour the garlic mixture over the carrots and toss them gently to coat. Then, sprinkle the grated parmesan over the carrots and mix again.
  5. Arrange the carrots in a single layer on the prepared baking sheet and roast for 20–25 minutes, stirring halfway through.
  6. Once done, sprinkle the roasted carrots with freshly chopped parsley and adjust seasoning if necessary. Serve them warm.
