- Preheat your oven to 220°C (425°F) and prepare a rimmed baking sheet with parchment paper or a light greasing.
- Wash and peel the carrots, then slice them diagonally into roughly 7 cm pieces. Toss them into a large mixing bowl.
- In a small microwave-safe bowl, melt the butter and stir in the sliced garlic, Italian seasoning, salt, and pepper.
- Pour the garlic mixture over the carrots and toss them gently to coat. Then, sprinkle the grated parmesan over the carrots and mix again.
- Arrange the carrots in a single layer on the prepared baking sheet and roast for 20–25 minutes, stirring halfway through.
- Once done, sprinkle the roasted carrots with freshly chopped parsley and adjust seasoning if necessary. Serve them warm.
