- Preheat oven to 400°F (200°C).
- Wash potatoes and cut into wedges.
- Toss potatoes in a bowl with olive oil, salt, pepper, garlic powder, and paprika.
- Spread potatoes in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway.
- Pat chicken breasts dry with a paper towel.
- In a small bowl, mix salt, pepper, paprika, onion powder, and Italian seasoning.
- Rub the seasoning mixture all over the chicken and let sit for a few minutes.
- In a large, oven-safe skillet, melt butter over medium heat and sauté minced garlic for 1-2 minutes.
- Add seasoned chicken to the skillet and cook undisturbed for 5-7 minutes on each side until golden brown and cooked through.
- Lower the heat and pour Garlic Parmesan sauce over the chicken, simmering for 2-3 minutes.
- Sprinkle mozzarella cheese over the chicken and cover with a lid for 2-3 minutes to melt.
- Serve the chicken with crispy potatoes on the side.
