Ingredients
  

  • 1.5 lbs sirloin steak, cut into bite-sized pieces
  • 12 oz twisted pasta (rotini or fusilli)
  • 1 tbsp butter
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • q.s. Salt and black pepper, to taste
  • q.s. Fresh parsley, chopped (for garnish)

  • Large skillet or cast-iron pan
  • Sharp chef’s knife and cutting board
  • Measuring cups and spoons

Method
 

  1. Pat steak bites dry and toss with Cajun seasoning, paprika, salt, and pepper; let sit for 10 minutes.
  2. Boil a large pot of salted water; cook twisted pasta according to package directions for al dente, then drain and reserve 1/2 cup pasta water.
  3. Heat a large skillet over medium-high heat, melt butter, then sear steak bites in a single layer until browned, about 2-3 minutes per side, adding garlic in the last minute.
  4. In the same skillet, reduce heat, add heavy cream, and whisk in mozzarella and Parmesan until smooth.
  5. Add cooked pasta to the sauce, tossing to coat, then fold in seared steak and juices; adjust consistency with reserved pasta water if needed.
  6. Serve hot, garnished with fresh parsley and additional Parmesan if desired.
