Ingredients
  

  • 8 ounces ramen noodles discard seasoning packet
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 1/2 cup sliced bell peppers any color
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes optional, for heat
  • 2 tablespoons chopped green onions for garnish
  • 1 tablespoon sesame seeds for garnish

Equipment

  • Large pot for boiling noodles
  • Large skillet or wok for stir-frying
  • Cutting board and knife for prepping vegetables
  • Small bowl for mixing the sauce
  • Spatula for tossing and stirring

Method
 

  1. Bring a large pot of water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat. Add the broccoli, carrots, and bell peppers. Stir-fry for about 4-5 minutes.
  3. Lower the heat to medium and add the minced garlic and butter to the skillet. Stir until the butter is melted and the garlic is fragrant, about 1-2 minutes.
  4. In a small bowl, mix the soy sauce, honey, rice vinegar, and optional red pepper flakes. Pour over the vegetables and stir to combine.
  5. Add the cooked ramen noodles to the skillet with the vegetables and sauce. Toss until the noodles are coated and heated through, about 2-3 minutes.
  6. Remove from heat and garnish with chopped green onions and sesame seeds. Serve immediately.
