Ingredients

  • 1 cup wheat flour
  • 2 tbsp baking powder
  • 1 tbsp cinnamon powder
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips or pieces
  • 1/2 cup whipping cream
  • 1 tsp butter (for sauce)
  • 1 tsp brown sugar (for sauce)

Equipment

  • Two mixing bowls (one large, one medium)
  • Whisk
  • Spatula
  • Rolling pin
  • Sharp knife
  • Baking tray
  • Parchment paper
  • Small saucepan

Method

  1. Preheat your oven to 180°C (350°F).
  2. In one bowl, whisk together the dry ingredients: flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix the wet ingredients: melted butter, brown sugar, egg, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until a soft, sticky dough forms.
  5. Lightly flour your countertop and knead the dough gently for about a minute, then roll it out to 1/2 cm thickness.
  6. Sprinkle the dough with extra cinnamon and sugar if desired, then roll it up tightly from one long side.
  7. Slice the log into about 8 equal rolls and place them on a baking tray with space in between.
  8. Bake for 15 minutes or until golden and firm to the touch.
  9. To make the chocolate sauce, combine chocolate chips, whipping cream, butter, and brown sugar in a small saucepan over low heat, stirring until smooth.
  10. Let the chocolate sauce thicken slightly off the heat before serving.

Notes

For a dairy-free version of the sauce, substitute the whipping cream with full-fat canned coconut cream.
Want to mix it up? Try adding finely diced apples, or a dash of nutmeg and cloves for a seasonal twist.
Leftovers? Store in an airtight container at room temperature for up to 2 days, and reheat gently. You can freeze them for longer storage!
For a festive touch, consider adding cranberries to the dough or serving with a sprinkle of powdered sugar.
