Method
 

  1. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  2. In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy.
  3. Beat in the egg, molasses, and vanilla extract until fully combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  5. Wrap the dough in plastic wrap and chill it in the fridge for at least 2 hours.
  6. Preheat your oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and use cookie cutters to create shapes.
  7. Place the shapes on a baking sheet lined with parchment paper and bake for 8-10 minutes.
