  • 1 cup cherry tomatoes halved
  • 1/4 cup white wine
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Method
 

  1. Season the cod fillets generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and place the cod fillets in the pan.
  3. Cook for 3-4 minutes per side until golden brown and cooked through, then remove from the pan.
  4. In the same skillet, add the sliced garlic and sauté until fragrant.
  5. Add the halved cherry tomatoes and cook for 2-3 minutes, then pour in the white wine.
  6. Cook for another 2 minutes to evaporate the alcohol, scraping any browned bits from the bottom.
  7. Stir in the chopped parsley, season to taste, and return the cod fillets to the pan.
  8. Serve immediately with lemon wedges on the side.
