Ingredients
  

  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 4 medium yellow onions halved and finely sliced
  • 1/2 teaspoon dried thyme leaves
  • 1/2 cup dry sherry or dry white wine
  • 1 cup beef broth
  • 2 cups Gruyere cheese grated
  • to taste Kosher salt
  • to taste freshly ground black pepper

Method
 

  1. Preheat your oven to 375F (190C).
  2. In a large skillet, melt the unsalted butter over medium-high heat and add sliced onions, seasoning with salt, black pepper, and dried thyme. Cook until caramelized, about 10-15 minutes.
  3. Add dry sherry or white wine to deglaze the pan and then add beef broth, simmering until reduced by half, about 5-10 minutes.
  4. Remove the top third of each baked russet potato and scoop out the flesh, mixing half of the caramelized onion mixture into it and seasoning if needed.
  5. Stuff each potato shell with the potato-onion mixture, then top with the remaining onions and grated Gruyere cheese.
  6. Bake for 20-25 minutes until cheese is melted and golden brown. Broil for 1 minute for extra browning if desired.
