Ingredients

  • 4 large ripe tomatoes, chopped
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, diced
  • 1 cup Kalamata olives
  • 200 g block of feta cheese
  • 3 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • to taste salt and pepper

Equipment

  • Sharp chef’s knife
  • Cutting board
  • Large mixing bowl
  • Small whisk or fork

Method

  1. Wash and chop your vegetables: dice the tomatoes, slice the cucumber, and dice the bell pepper. Thinly slice the red onion and soak it in cold water for 10 minutes if you prefer a milder flavor.
  2. Arrange the tomatoes, cucumber, bell pepper, and onions in a large bowl. Scatter the Kalamata olives over the top.
  3. Place the block of feta cheese in the center of the salad. Add a sprinkle of dried oregano over the feta for flavor.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Drizzle the dressing over the salad just before serving and crumble the feta cheese at that time.

Notes

For a different twist, try using black olives or goat cheese if you can't find Kalamata olives or feta. If you're preparing this salad in advance, store the ingredients separately and only dress what you plan to eat to keep everything fresh. Enjoy it with some crusty bread for an authentic Mediterranean experience.
