  • 8 ounces fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 cup broccoli florets (optional, steamed)

Method
 

  1. Mix olive oil, garlic powder, paprika, salt, and pepper in a bowl and coat the chicken breasts evenly with the marinade. Let sit for at least 20 minutes.
  2. Heat your grill to medium-high and grill the chicken for 6-7 minutes per side until cooked through. Let the chicken rest before slicing into strips.
  3. Bring a large pot of salted water to a boil, add fettuccine, and cook according to package instructions until al dente. Drain and set aside.
  4. Melt the butter in a skillet over medium heat. Add minced garlic and sauté for a minute. Pour in the heavy cream and stir until simmering. Whisk in the Parmesan cheese until the sauce thickens.
  5. Toss the cooked fettuccine in the alfredo sauce until well-coated. Add the sliced grilled chicken and optional broccoli, and stir gently to combine.
