  • 1 cup fresh mozzarella cheese sliced

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey optional

Method
 

  1. Season the chicken breasts generously with salt and pepper.
  2. Let the chicken sit for 10 minutes to enhance flavor.
  3. Heat your grill to medium-high heat.
  4. Brush the grill grates with olive oil to prevent sticking.
  5. Place the chicken on the grill and cook for about 6-7 minutes per side, or until internal temperature reaches 165°F.
  6. Transfer the chicken to a plate and let it rest while preparing the toppings.
  7. Slice the tomatoes and mozzarella.
  8. Arrange tomato slices on top of each chicken breast, followed by mozzarella.
  9. Return the chicken to the grill covered for another 2-3 minutes until cheese melts.
  10. In a small saucepan, combine balsamic vinegar and honey over medium heat until thickened, about 5-7 minutes.
  11. Drizzle the balsamic reduction over the chicken before serving.
