Ingredients
  

  • 8 oz pasta your favorite pasta (penne, spaghetti, or fettuccine)
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes halved
  • 1/2 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • to taste salt
  • to taste pepper
  • fresh basil leaves for garnish

  • Large pot for boiling pasta

  • Skillet for sautéing

Method
 

  1. Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
  2. Heat a grill pan over medium-high heat and cook the chicken for about 6-7 minutes per side until golden brown and cooked through.
  3. Let the chicken rest for a few minutes before slicing it into thin strips.
  4. Boil a large pot of salted water and add your pasta, cooking according to package instructions until al dente.
  5. Drain the pasta but reserve about 1/2 cup of the starchy pasta water.
  6. In a large skillet, heat a tablespoon of olive oil over medium heat.
  7. Sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
  8. Add the cherry tomatoes and let them soften slightly, releasing their juices.
  9. Add the cooked pasta to the skillet along with the sliced grilled chicken.
  10. Pour in a splash of the reserved pasta water and toss everything together.
  11. Sprinkle in the Parmesan cheese and stir until the sauce thickens slightly.
  12. Finish with freshly torn basil leaves and a squeeze of lemon juice for brightness.
