Ingredients
  

  • 1 pound Italian sausage links or your choice of sausage
  • 2 whole bell peppers sliced into chunks
  • 1 whole red onion cut into wedges
  • 1 cup pineapple chunks optional, but recommended
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste pepper

Method
 

  1. In a bowl, whisk together olive oil, soy sauce, minced garlic, smoked paprika, salt, and pepper to prepare the marinade.
  2. Pour the marinade over the sausage pieces and let them soak for at least 30 minutes.
  3. Thread the marinated sausage pieces onto skewers, alternating with bell peppers, onions, and pineapple chunks.
  4. Heat your grill to medium-high heat or preheat your oven to 400°F.
  5. For grilling, place the skewers on the grill and cook for 8–10 minutes, turning occasionally, until the sausage is cooked through and slightly charred. For the oven, arrange the skewers on a baking sheet and roast for 15–20 minutes.
