Method
 

  1. Start by patting the steaks dry with paper towels.
  2. Season generously with salt, pepper, garlic powder, and smoked paprika.

  5. For charcoal, arrange the coals for direct heat. For gas, set one burner to high and another to medium.

  9. For medium-rare, follow the 3 3 3 rule: cook for 3 minutes, rotate for diamond grill marks, and cook for another 3 minutes.

  11. Transfer the steaks to a cutting board and let them rest for 5 minutes.
