Method
 

  1. Pour the pineapple juice into a small saucepan and bring it to a simmer over medium heat.
  2. Add the soy sauce, brown sugar, rice vinegar, ginger, garlic, and chili flakes. Stir everything together until the sugar dissolves.
  3. Let the mixture reduce for about 10 minutes, aiming for a slightly thicker consistency, almost like syrup.
  4. Stir in the ketchup and sesame oil, then remove from heat. Taste and adjust sweetness or spice if needed.
