- In a large pot, heat a drizzle of olive oil over medium heat and sauté the finely chopped onion until translucent, about 5 minutes.
- Add the diced carrots and celery to the pot, stir, and cook for another 5 minutes.
- Add the minced garlic and cubed ham, mixing everything together and cooking for 2 minutes.
- Add the white beans, vegetable broth, bay leaf, and thyme to the pot, stir, bring to a boil, then reduce heat to simmer for about 30 minutes.
- Season the soup with salt and pepper to taste, remove the bay leaf, and serve.
