Ingredients
  

  • 200 g white beans
  • 150 g ham, cut into small cubes
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 liter vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • to taste salt and pepper
  • a little tbsp olive oil

Method
 

  1. In a large pot, heat a drizzle of olive oil over medium heat and sauté the finely chopped onion until translucent, about 5 minutes.
  2. Add the diced carrots and celery to the pot, stir, and cook for another 5 minutes.
  3. Add the minced garlic and cubed ham, mixing everything together and cooking for 2 minutes.
  4. Add the white beans, vegetable broth, bay leaf, and thyme to the pot, stir, bring to a boil, then reduce heat to simmer for about 30 minutes.
  5. Season the soup with salt and pepper to taste, remove the bay leaf, and serve.
